What actually breaks in the upgrade
Indices from 6.x must be reindexed
An Elasticsearch 8.0 node will not start with indices created before 7.0. Reindex them on 7.17 first; for large clusters this is the longest part of the upgrade.
Security is on by default in 8.x
8.x enables TLS and authentication on first start and removes mapping types. Clients, ingest pipelines and dashboards all need testing against the new defaults.
